A healthy but elegant alternative to the traditional pancake. This selection has a creme brule-like consistency.
Ingredients
3 tablespoons butter or margarine
4 eggs
1 cup milk
1 cup all-purpose flour
1 tablespoon sugar
1/8 teaspoon ground nutmeg
TOPPING:
3 tablespoons butter or margarine
3 apples, sliced
3 pears, sliced
3 tablespoons sugar
Maple syrup, optional
Method
Place butter in a 10-in. ovenproof skillet; place in a 425° oven for 2-3
minutes or until melted. In a blender, process eggs, milk, flour, sugar and
nutmeg until smooth. Pour into hot skillet. Bake for 20 minutes or until puffy.
Meanwhile, for topping, melt butter in a large skillet. Cook apples, pears and
sugar for 12-15 minutes or until fruit is tender, stirring occasionally. Pour
over pancake and cut into wedges. Serve with syrup if desired.
Yield: 4-6 servings.
Very simple to make but tastes and looks like it took forever to create!
